What's in a Coffee Bean
Why all the different kinds of coffee? Coffees, like wines, taste different from each other. The flavor is altered from a combination of the climate and soil it grows in, how the coffee is processed (wet vs dry) and, of course, the way it is roasted.

Another important factor is how the coffee is picked. The best coffees are picked by hand, selecting only the red ripe cherries and allowing the green, unripe cherries to stay on the branch to ripen. The cheaper, lower quality coffees are picked the faster way by stripping the branch of all the cherries; some green and unripe and others red and ripe. The more labor intensive method of picking only the ripe cherries produces a superior coffee. At Persnickety Tim's Coffee, we use only coffee that comes from the ripe cherries picked at their peak of flavor.
