Buying Espresso The espresso drink you make at home will probably be much better than what you buy in 90% of the cafés or restaurants. Buying the right espresso beans is, of course, essential.
My roast is made to avoid the burned taste, which is found in many dark roasts. I slow roast my espresso beans to mute the acidity, which is greatly exaggerated in espresso. This allows the true taste of the coffee to come through. The reason most espresso is very dark roasted is to remove much of the acidity (the sharp taste of the coffee) but still roast it quickly. My coffee takes longer to roast but I think the result is worth the extra time. |
